Pietra Vitovska<\/a> Mandria Tav\u010dar comes from 15-year-old vines from the Mandria vineyard, which is surrounded by forest and is therefore optimally suited for organic work. <\/span><\/p>\n

Under a thin layer of soil lies a “sandy” stone, which is not typical of the Karst, but is said to suit the Vitovska variety perfectly. It is a vein that continues into the vineyard of Marko Fon and on to Paolo Vodopivec, the great master of Vitovska.<\/p>\n

The grapes were hand-picked and selected at the end of September and beginning of October. The selection process required extra care as the vineyard was hit by hail in August, damaging some of the grapes. Desteming and crushing was followed by 3-5 days of maceration and spontaneous fermentation in an open vat. After gentle pressing, the wine was then aged in a concrete barrel for a year and a half. This was followed by decanting and bottling without filtration, with a very modest addition of sulphites.<\/p>\n

The wine is wheat-yellow in colour, slightly cloudy. On the nose, there are mainly apple-citrus aromas, with lime and grapefruit predominating. The scent is enhanced by dried apples and meadow herbs. The texture is slightly oily, the acids pleasantly juicy. Stony minerality is obvious. We taste pears, apples, fresh mango, passion fruit. Aftertaste is long and – at the end – nicely salty.<\/p>\n

With this wine, Marko showed a masterpiece of reaction to the problems brought by the hailstorm.<\/span><\/span><\/p>\n

Homestead Tav\u010dar<\/h5>\n

Marko Tav\u010dar is a young vinegrower on a farm in Kreplje, where his ancestors grew seasonal vegetables, had dairy cows, chickens … and, of course, vineyards. When he cooked at Ada \u0160pacapan’s in Komen a few years ago, he met many winemakers there, including Mark Fon. He found out that his father Milivoj had in fact been bottling excellent wines, especially Vitovska and Malvasia, since the 1990s. Today, on just under three hectares, Tav\u010dar focuses mainly on Vitovska and Malvasia, but also produces some Teran. The approach in the vineyards is similar to that of Mark Fon. Vines are treated on a virtually individual basis. It’s the same with varieties. Working with Vitovska is very different from working with Malvasia or Refosco (Teran).<\/p>\n","protected":false},"excerpt":{"rendered":"

The colour is an intense golden yellow, with ripe apricot, orange peel and meadow flowers on the nose. On the palate, we taste juicy ‘karst’ acids and plenty of minerality. A yellow apple, a ripe pear and a vineyard white peach. The tannins are present, but elegant and rounded. The aftertaste is pleasantly fruity, with a hint of light aromas of ripe fruit.
