Klobaska (little sausage) is an entry product into the world of learning about BioSing<\/a> products. Composed of pork and bacon. We want to emphasise the authentic, open, delicate aroma of cured meat, where you can taste the natural composition and forgotten flavours without added additives.<\/p>\n

David conceived the name BioSing as BIO SALAMI ENGINEERING, because it is about designing a product from the very beginning. From the careful selection of raw materials, through the idea and personal approach, to the final preparation, presentation and tasting. The result are gourmet products and exquisite taste that open up new dimensions. These are unique, boutique cured meat products for people who know how to appreciate taste. BioSing is available in specialised shops and restaurants. Their tasting is a special experience, rounded off by the pairing of premium natural wines.<\/p>\n

Preparation<\/h5>\n

BioSing has brought preparation back from industrial production to the level of artisanal craftsmanship. Preservatives, additives and all factory shortcuts have been eliminated. They aim to achieve a full, ripe aroma, a unique bouquet and a rich, natural flavour, while respecting the highest standards. The products are gently smoked naturally with selected beech smoke, which is cooled in underground pipes to preserve the esters that give the product its subtle aroma. David Lesar: “I am pleased that BioSing products are additive-free, because not only are they natural and authentic, but I can consider them to be medicine. Due to the natural fermentation with indigenous micro-organisms, it contains a lot of probiotics and is an extremely complex and functional food.”<\/p>\n

Carefully selected meat is processed exclusively on the moon cycle. Meat and bacon are not minced but diced, and they carry the international organic certification. The pork used is almost exclusively organic pork from native Kr\u0161ko Polje pigs. It is scientifically proven to be high in omega-3 unsaturated fatty acids in the ideal ratio. It has 75% less cholesterol than farmed pig meat and half the cholesterol of beef and chicken. The products are matured in an underground clay ripening room using natural ventilation and temperature control. This allows the hyphae (noble moulds) to penetrate through the casing to the meat, where they release lipolytic and proteolytic enzymes. This has a significant effect on ripening and gives BioSing products their characteristic smoothness and velvety taste.<\/p>\n","protected":false},"excerpt":{"rendered":"
