The golden-yellow wine was macerated for four days. After gentle pressing, the wine was aged for 12 months in large used wooden barrels and rested for a few months after bottling. On the nose, there is ripeness, delicate herbal (rosemary, bay, thyme) and balsamic notes. Taste is balanced, varietal notes are present, but more in the background. Acids are moderate, tannins very gentle. There is a saline mineral character.<\/span><\/p>\n<p class=\"artclass\">It is a very fine example of this indigenous variety of Vipava.<\/p>\n<p class=\"artclass\">The vineyards of the Fedora estate are located above the Brani\u0161ka Valley, specifically above the village of Dolanci. It is a very interesting location, as the Vipava Brda (hills) touch Karst. The Kobal family planted the first vineyards on these hills at the end of the 19th century.<\/p>\n<h4>Fedora House<\/h4>\n<aside class=\"fin2box f2b-type-4\" data-type=\"4\"><\/aside>\n<p class=\"artclass\"><strong>Valter Kobal <\/strong>and his partner <strong>Mojca Tir\u0161ek<\/strong> took over the family estate in 2014, becoming the fifth generation to be involved in viticulture and winemaking. They have a clear objective &#8211; to produce indigenous wines that reflect particularities of the micro-location or terroir.<\/p>\n<p class=\"artclass\">Their location is ideal for this approach. The substrate is varied &#8211; marl, flysch, clay, limestone &#8230; Temperatures are lower than in the Vipava Valley, and there are large differences between night and day temperatures, which is crucial for quality ripening.<\/p>\n<p class=\"artclass\">Valter and Mojca preserve and restore the best of the farm&#8217;s location. The vineyards are terraced and face south and south-east, at an altitude of between 200 and 350 metres.<\/p>\n<p class=\"artclass\">The farm is certified organic, but otherwise adheres to a number of biodynamic principles and practices, including following the moon in both the vineyards and cellar, using compost rich in micro-organisms for fertilisation, and mostly using pest baits instead of sprays.<\/p>\n<p class=\"artclass\">Weeds are removed by hand. The vineyards are grassed, and all work on the vines, including harvesting and grape selection, is also done by hand. At the edge of the vineyards are small ponds &#8211; reservoirs of water that provide life between the vines, as they say, for the crowds of inhabitants.<\/p>\n","protected":false},"excerpt":{"rendered":"<p class=\"\"><span style=\"color: #000000;\">Spontaneously fermented malvasia, golden yellow in colour, macerated for 3 days, then matured after gentle pressing for 24 months in used barrique casks, and after bottling in the cellar for a further year. A beautiful example of an elegantly macerated white wine that captivates with its lovely fruity and floral aroma, and even more so with its freshness and complexity on the palate.
