Biodynamically produced sauvignon. On the nose, with its characteristic nutty honey, caramel and overripe fruit notes, it is reminiscent of fine sweet wines, even though the wine is completely dry. Rich body with pronounced honey, floral and mineral aromas and characteristic oxidative notes resulting from the fact that 50% botrytised grapes were used in the vinification. The wine is almost amber-yellow in colour. Herbs appear in the background – sage, rosemary, a little white pepper and delicate notes of flint. In the mouth, the texture is incredibly buttery, almost oily-viscous. The acidity is extremely high and, together with the mineral component, balances fruit and oxidative complexity. In contrast to the sauvignons we know as “school”, here the grassy and elderflower notes and tomato stem appear later and stay in the background. But we can smell the white pepper. The fruitiness is less ripe on the palate than the nose suggests, which is a good thing as it keeps the wine very fresh. The salinity is also quite pronounced. The aftertaste is exceptional! Long and intertwined with all the above. Right at the end, a ripe calf appears. You will continue to taste traces of this wine for an hour after the last sip.
