Butul<\/a> Pozabljeni sod (Forgotten Barrel) is a malvazija that has matured in a barrel that has not been regularly topped up as wine level had decreased. As a result, after a few months, the barrel was no longer filled to the top. The surface of the wine has developed the flor, which is typical of the French Jura region or of Fino sherries. This gives the wine its tertiary aromas, which are most reminiscent of nuts, especially fresh walnuts. The fruit component is of course present. Ripe apples, pears and white plums are the main fruit. A wine for lovers of this style and for all who enjoy discovering special wine delicacies.<\/p>\n

 <\/p>\n

Butul estate<\/h5>\n

Butul estate is located in the village of Man\u017ean, where the vineyard of the Malvazija overlooks the bay of Koper and the Julian Alps. Tatjana has lived in Man\u017ean since birth, while Mitja moved from Se\u017eana to the Slovenian coast 40 years ago. In Man\u017ean, Tatjana and Mitja built an open house among the Malvazija vineyards, which was also tended by Tatjana’s grandfather.<\/p>\n

For almost three decades, they have been building a wonderful story here, one could say of international proportions. Their son \u010crt is, as his father says, the fifth generation to carry on the tradition of viticulture and winemaking on this small but diverse estate. \u010crt is better known to the Slovenian and wider public as an innovative chef. He was trained in many excellent gastronomic institutions in Slovenia and abroad. Nono Renato (Tatiana’s father), despite his enviable age, is still an inexhaustible source of useful information and experience in vineyards and winery work.<\/p>\n

Vineyards<\/h5>\n

The farm currently has between four and five hectares of land, of which one and a half hectares are vineyards. The vines are between 30 and 50 years old with new plots being planted. The main varieties are, of course, Malvazija and Refo\u0161k (Refosko). They also work with old varieties such as Malo\u010drn, Kanarjola, Istrian Muscat, Cipro and even Glera. They build on the family’s traditional knowledge and experience by networking and cooperating with winemakers of similar philosophy in Slovenia and abroad.<\/p>\n

Vinification<\/h5>\n

Fermentations take place spontaneously. White and red varieties macerate for different lengths of time. After maturing in used barrels of various sizes, the wine is transferred to inox tanks and then bottled with a minimum addition of sulphites.<\/p>\n","protected":false},"excerpt":{"rendered":"
