The split and gently crushed grapes were fermented spontaneously (pied-de-cuve technique) in neutral epoxy vats. Maceration took place over 10 days, after which the wine was aged for a year in epoxy tanks of 2,500 to 7,000 litres. Bottling is done at the time of the moon cut, with very gentle 1 micron filtration and without the addition of sulphites (sulphur).<br \/>\nAn incredible experience of terroir and authenticity without added sulphur. Light ruby, slightly opaque. The nose is complex herbal, mineral (volcanic soils), cranberry, raspberry, forest. The taste is unique, with shy but pleasant tannins, a pronounced and characteristic minerality, wild strawberries, raspberries, cranberries and finally ripe red apple. Nice, slightly spicy aftertaste.
