The 2010 vintage already offers tertiary notes at this moment, mainly dark chocolate, cedar, some tobacco.<\/p>\n<p class=\"\">The &#8220;Dolomitici&#8221; consortium of winemakers from Trentino has preserved a biodynamic vineyard dating back to the early 1920s. Chair. containing exactly 727 ungrafted vines of the red variety &#8216;Lambrusco a foglia frastagliata&#8217;. Only around 3,000 bottles are filled each year.<\/p>\n<h5>Ciso<\/h5>\n<p>Ciso is the result of one of the few and most beautiful joint projects of Italian viticulture. It is a consortium of Dolomitici, a group of winemakers from Trentino, including Elisabetta Foradori and Eugenio Rosi. It is based on exactly 727 vines from a 100+ year old vineyard of the &#8216;serrated leaf&#8217; Lambrusco variety, known in other regions of Italy as Enantio. Ciso is actually more than just an old-fashioned wine.<\/p>\n<p>It pays tribute to Ciso, a farmer from Avia, who took care of 727 vines for decades and never thought of uprooting them and replacing them with more commercially compatible varieties. Nor did he want to follow the classical monoculture that began to emerge around him in the 1950s. His vines grew in a wild mess amidst tobacco, wheat, corn and zucchini plants and were never grafted onto American soil &#8211; the fact that they were not attacked by the vine louse is due to the alluvial sandy soils in which the vines are rooted and in which the vine louse cannot survive.<\/p>\n<p>When Ciso died in the late 2000s, Elisabetta &amp; Co. took over his vineyard and have been managing it ever since. The grapes ferment spontaneously, macerate for a long time, are gently pressed and then aged in a large wooden barrel. The first attempts by the Dolomites, who had no experience with the variety, ended rustically. After seven years, the team knows all the specificities of the vineyard and the variety, and makes a wine that has sharpness but also beautiful texture, liveliness and dark aromas.<\/p>\n<p>&nbsp;<\/p>\n<h5>Lambrusco a foglia frastagliata<\/h5>\n<p>The Lambrusco a foglia frastagliata vine and its wines of the same name are catalogued in the Italian National Register of Vine Varieties. It is also known as Enantio (pronounced &#8220;enantio&#8221;). The name is obviously of Latin origin and Pliny the Elder seems to have mentioned &#8220;vitis labrusca&#8221; &#8220;quod Enantium vocatur&#8221;, i.e. known as Enantio.<\/p>\n<p>The vines are grown in Lower Vallagarina. It is found in the countryside between Ceraina and Ala and is the basic variety for the production of Valdadige DOC red. Lambrusco differs from other wines, which usually have whole or three-lobed leaves, in that it has a distinctly &#8216;lance-shaped&#8217; leaf, i.e. a &#8216;serrated&#8217; profile. The desire to promote the synonym Enantio for this vine has contributed to the resurgence of this variety. It is present throughout the area and until a few years ago was most abundant in the valley of the lower Vallagarina.<\/p>\n<p>The commercial importance of the Enantio vine is not very significant at present, although it has made a significant contribution to the local economy in the past: production, which used to be over 120 000 quintals, has since shrunk to the current 6 000.<\/p>\n","protected":false},"excerpt":{"rendered":"<p class=\"\">The &#8220;Dolomitici&#8221; consortium of winemakers from Trentino has preserved a biodynamic vineyard dating back to the early 1920s.
