JNK Jakot.\u00e9 is a Friulian tokaj that has been left for five days in contact with the strawberry skins and then gently pressed. It was matured for a year and a half in second-hand barrels and then for six months in inox. The colour is golden yellow. On the nose there is grapefruit and lime, dried apples, dried Mediterranean herbs and traces of pineapple. The texture is pleasantly buttery, the acids quite pronounced but very pleasant and juicy. There is a slightly higher alcohol level, which is nicely balanced by the acids and the mineral saltiness. The fruit described earlier also appears on the palate. The aftertaste is fantastic and long.<\/p>\n

JNK<\/h5>\n

The Mervi\u010d family has been involved in viticulture and winemaking at the JNK homestead since the end of the nineteenth century, when Kristina’s great-grandfather, who planted the first vineyard in \u0160empas, started producing wine, and his daughter-in-law Kristina brought additional vineyards in the \u0160mihelo area to the house. The wine-growing was then continued by his son Oskar and his wife Slavka, who had three sons. One of them is Boleslav, which has elevated the wines known as JNK to an exceptionally high level of quality in recent decades. His daughter Kristina took over the farm in 2009, but her father is still very much present in both the vineyards and the winery.<\/p>\n

Vineyards<\/h5>\n
Today, about three hectares of vineyards are farmed sustainably. Some of them are around \u0160empas, where the altitude is around 100 metres above sea level, and the rest are near \u0160mihelo, at around 300 metres above sea level. Beneath the topsoil is either brick or sandstone. Most of them are rebula, the rest are tokaj, malvasia, chardonnay, merlot and cabernet sauvignon. There are some sauvignon and white pinot, and 600 vines of vita.<\/span><\/div>\n

Working in the vineyards has always been about respecting nature. They have never used herbicides, pesticides or synthetic fertilisers. Kristina has also taken some courses in biodynamics in Italy, partly introducing it into the vineyard and winery processes. The estate is not certified, but now that Kristina is focusing exclusively on the homestead, she is likely to do so. Most of the vineyards are under cultivation. The breeding form is the single guyot in the case of Tokay and Vito, and the single guyot in the case of the other varieties. “Tokaj and Vito are simply the wake-up varieties for monoguyot,” says Kristina.<\/p>\n<\/div>\n
