Pheasant’s Tears<\/a> Saperavi 2010 is a ripe red wine with a deep ruby colour. The variety is so dark that it is called black in the Georgian language. The wine starts with a strong tannic structure, aromas of blackcurrants, roasted almonds and earthy notes. The taste brings us black berries, prunes, tobacco, dark chocolate… The 2010 vintage has moderate acidity, full body and still perceptible, but already well-rounded tannins.<\/p>\n

Kvevri (qvevri)<\/h5>\n

All Pheasant’s Tears wines are fermented and matured in qvevris, a unique Georgian vessel used for fermenting and storing wine. Qvevris were the first vessels ever used for fermenting wine, with archaeological finds dating back to 6000 BC. These are clay pots impregnated with beeswax and completely buried underground, where the temperature stays the same practically all year round. This allows the wines to ferment in the natural coolness of the soil. The Pheasant’s Tears qvevris are of various ages, some dating back to the mid-19th century. The cellar is built in the vineyard itself, reducing damage to the grapes during transport. The proximity to the cellar allows harvesting and pressing before the hot sun sets. It is usually a matter of hours before the harvested grapes are already put in a cool qvevri.<\/p>\n

Vinification<\/h5>\n

In accordance with Georgian traditional winemaking methods, the ripest stems are added to the grape skins and juice, for both red and white wine. The maceration period varies depending on the variety and size of the qvevris, ranging from 3 weeks to 6 months. As all the estate’s wines are aged exclusively in qvevris, they are not influenced by wood. Some see this as a disadvantage, others see it as an opportunity to let the quality of the grapes, and consequently the wine, shine in all its glory.
