The 2019 vintage is the first to be aged exclusively in amphorae (kvevri), no longer in wooden barrels. On the nose, we mainly detect dried apricot, ripe nectarine, light earthy and pleasant herbal notes. Despite its youth, the wine is elegant on the palate, especially when it gets a little air. Moderate butteriness, present but nicely ripe and rounded tannins and enough acidity, which together with the salty mineral component, gives the wine its freshness. Dried apricot repeats in the mouth, joined by dried tepka, mango, a strongly ripe apple and a piece of cake. The aftertaste is juicy and long.<\/p>\n<div><\/div>\n<h5>Andrej and Tina Cep<\/h5>\n<div><span lang=\"SL\">Andrej and Tina Cep planted the first vineyards in Kolomban above Ankaran in 2004. From the very beginning, the vineyards have been worked without the use of chemical inputs such as pesticides, herbicides, systemics and fertilisers. Only sulphur and copper are used for spraying &#8211; in very moderate quantities &#8211; &#8220;I didn&#8217;t know any other way&#8221;, says the farmer, &#8220;because I was not burdened by the practices of my predecessors&#8221;. Andrej didn&#8217;t even know about the organic certification at the beginning, and only found out about it when he started to appear at wine events in Slovenia and abroad. The farm has been officially certified as organic since 2012. They are currently cultivating three and a half hectares of vineyards, with the ambition to increase this to five, for which they have already prepared the land next to the existing vineyards.<\/span><\/div>\n<div><\/div>\n<h5>Vineyards and winemaking<\/h5>\n<div>\n<div><span lang=\"SL\">Seventy percent of the vineyards are Malvasia, with a small amount of yellow Muscat, grey Pinot and Chardonnay, which Gordia cannot imagine a good sparkling wine without. Red accounts for about 25%. Cabernet sauvignon, merlot and riesling usually go together in the bottle. It was only with the 2016 vintage that Andrej made varietal refo\u0161kis for the first time, and the grape became classically Bordeaux.<\/span><\/div>\n<div>\n<p style=\"font-weight: 400;\">For sparkling wines and fresh Malvasia, the harvest is usually finished in mid-August, thus preserving freshness. For other wines, the harvest takes place a few weeks later, but certainly as soon as the grapes have reached the appropriate phenolic ripeness. Cep avoids excessive alcohols, thus maintaining a balance between body, complexity and freshness, even in long macerated white wines. The grapes are selected very carefully during the harvest itself. Once in the cellar, the grapes are split, crushed and slowly and gently pressed for sparkling and fresh wines. For the macerations (white and red), the crushed grapes from the 2019 vintage onwards go to the Georgian kvevriyas, where both fermentations and macerations of varying lengths take place. After pressing, the wine is returned to the vats for further ageing. Previously, after pressing, it was bottled in wooden casks, which Andrej seems to be abandoning completely.<\/p>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p class=\"\">An excellently produced and aged white macerated wine.
