The 2011 \u010cotar Terra Rossa is an incredible red wine with a deep ruby colour. On the nose we get a mix of ripe and dried plums, blueberries, blackberries, forest undergrowth, tobacco… On the palate, we taste a balanced combination of the above mentioned fruits, joined by blackcurrant and – especially on the long finish – dark chocolate. There are some earthy notes and a gentle spiciness. A great Karst red!<\/span><\/p>\n

Branko and Vasja \u010cotar<\/h5>\n

The \u010cotars produced their first wines in 1974, at that time exclusively for the family restaurant. Vasja and Branko were also one of the pioneers of maceration of white varieties in Slovenia. Their work in the vineyards and wineries could be described as a constant evolution, an approach backed by years of experience and constantly refined by small improvements. The work in the vineyards is organic and the work in the cellar is minimalist, i.e. without unnecessary interventions. Despite the fact that Chotar’s wines are not usually added sulphur, both red and white wines retain an almost unbelievable freshness and youthfulness for many years, even decades.<\/span><\/p>\n

Farm and cellar<\/h5>\n

The \u010cotar family farm with vineyards, a cellar and a house is located in the west of the Karst region in Gorjansko<\/a>, just 5 km from the sea. Despite the family tradition, the current farm was created from scratch. It was 40 years ago, in 1974 to be precise, that they built the first part of the cellar, dug into the living rock, and produced their first wines, Teran and Kra\u0161ko Belo, for their own tavern. The first wines, the 1988 vintage, were bottled for sale in 1990. The second part of the cellar was built the year before, and the rest of the cellar was added in 2002.<\/p>\n

Vineyards<\/h4>\n

\u010cotar is an organic farm where the vineyards are farmed in a nature-friendly way. The vineyards cover Pe\u010dina, Olarija, Dra\u017ena, Dusce, Polje, Kot, Ivanji grad, a total of 7.5 ha. Planting a vineyard in this part of the Karst means deforestation, loosening of rocky terrain and the introduction of soil.<\/p>\n

Teran, Cabernet Sauvignon, Merlot, Malvasia, Sauvignon, Vito.<\/p>\n
