The 2018 Rencel Pinot Noir is a translucent ruby red blue pinot with a garnet tint. Intense aromas of plum jam, dark chocolate, forest undergrowth, coffee, leather and tobacco. Accentuated softness with rounding tannins, a pleasant freshness that emphasises the balance of the flavour, where blueberry, blackberry and wild strawberry predominate. In the south-west of Slovenia, almost on the border with Italy, in the small Karst village of Dutovlje, a house proudly bears the number 24. This is a house where a family has lived for many years with sincere love and dedication to their work.<\/p>\n
The Ren\u010del homestead has always lived in close harmony with nature. Their ancestors were also involved in livestock breeding and agriculture, but wine production has always come first. Eventually, they focused entirely on viticulture and expanded their vineyards to ten micro-locations spread over three and a half hectares. The years pass, the generations change, but the philosophy of the farm has remained the same over the years: everything is done with a loving and respectful attitude towards nature, wine and people.<\/p>\n
In particular, the indigenous varieties of teran (refosco) and Vitovese grganja are produced hand in hand with nature and according to the precepts of biodynamics. The red soil and the unique Karst climate also offer good terroir for varieties such as Malvasia, Sauvignon, Blue Pinot, Chardonnay, Merlot, Cabernet Sauvignon.<\/p>\n
It is said that a single bottle of Ren\u010dl’s wine captures the unique character of the winemaker. His inimitable sympathy, his irrepressible enthusiasm, his endless curiosity and his sophisticated intelligence.<\/p>\n
Ren\u010dli believes that white macerated (orange) wines should retain their varietal character, so they always adjust the maceration to the variety. Malvasia and Viognier are macerated for 10 to 14 days, while Sauvignon is macerated for only three days. Fermentation takes place spontaneously by fungi brought in from the vineyard by the grapes. The wine is then aged for at least two years in a wooden container and then in the bottle.<\/p>\n
Before maceration begins, a yeast spigot is prepared – the so-called Pied de cuve. It is the pre-harvesting of ripe grapes to make must, where fermentation begins with the help of indigenous yeasts brought from the vineyard by the grapes. Later, it serves as a boiling spout.<\/p>\n
As regards white macerated wines, they take the view that the wine must retain its varietal character, so they adapt the maceration to the variety.<\/p>\n
Maceration takes place in open vats and is not temperature-controlled.<\/p>\n
After maceration, the wine is matured in oak barrels, where the lees play an important role. These dead yeasts affect the course of malolactic fermentation. The wines are more stable and richer in extract, and more rounded and full-bodied.<\/p>\n
White wines are aged in wooden containers for at least 2 years. Red wines are aged in wooden containers for at least 3 years, while sweet wines made from dried grapes are aged for 8 years or more. As they are also in favour of minimising intervention in the cellar, they do not filter their wines. The wine is then kept for at least 6 months in a stainless steel container, where it is cleaned of solid particles by gravity.
