Sarnin-Berrux, Saint Romain<\/a> is a blue Pinot that impresses with a combination of black berry, prune and tertiary aromas – forest undergrowth, tobacco. Jean-Pascal SARNIN and Jean-Marie BERRUX<\/h5>\n

The winery in Month\u00e9lie in the C\u00f4te de Beaune was born in 2007 thanks to the friendship of Jean Pascal Sarnin and Jean Marie Berrux. The philosophy from the very beginning has been to buy organic grapes from the growers of the two Cotes and to vinify them in a natural way. The wines reflect the diversity of the different Burgundy parcels. Although they come from two different worlds, the former worked in high finance, the latter first in communications and then in various cellars in Jura and Burgundy. They share a common passion: the love of real and authentic wine.<\/p>\n

Grapes<\/h5>\n

For Sarnin and Berrux, the choice of grapes is crucial. Work in the vineyards must be carried out without herbicides, pesticides, systemics or artificial fertilisers. Key decisions regarding work in the vineyards are made according to the lunar calendar. Pressing of harvested grapes is mild. Red wines are kept in one cellar at one temperature until the end of alcoholic fermentation, while white wines are kept in another cellar at a more suitable temperature for white wines.<\/p>\n

Vinification<\/h5>\n

They are big supporters of sustainable development and respect for the environment and are committed to producing quality, natural and vibrant wines from grapes they buy from organic growers. The wines are produced in a traditional and ancient way, but with the help of modern technology: both the grapes and the wine are not subjected to any oenological products (apart from a slight sulphur treatment before bottling). Mechanical intervention is kept to a minimum, relying on modern equipment. The use of a pneumatic press allows the crop to be gently processed. Vinification is carried out without the introduction of sulphur, yeasts, enzymes, etc. The same applies to the maturation period of the wine, which takes place on the lees, until the only flow before bottling.<\/p>\n
