But there are a few who look for flaws in sustainably produced wines at any cost. To put it bluntly &#8211; less than a decade ago, natural wine festivals were far too often filled with wines that belonged nowhere else but in the canal. As it happens, there are always individuals who want to take a shortcut to their destination (read: make money). This is impossible with natural wines, as I have already written about. Processes are spontaneous and take time. Any overtaking leads to a bad result. The market, i.e. private and professional buyers of natural wines, has of course taken its toll and today it is increasingly rare to find wines with real defects. Let&#8217;s take a look at some of the most common mistakes. Some occur in all wines, others are more the &#8220;domain&#8221; of natural wines.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Smell and taste of &#8220;cork&#8221;<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">In reality, it is not the smell or taste of flying, but of an infected cork or a compound called TCA (2,3,6-trichloroanisole). This usually occurs when fungi naturally present in the cork come into contact with bleach and some other chlorine-based disinfectants for cage equipment.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Oxidation<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">Here we are on much thinner ice. It is still the case that even experts and official panels assessing the suitability of wines label oxidative notes as oxidised. Oxidised wine usually has a markedly elevated level of acetaldehyde and acetic acid, which can be detected as an odour of acetone and\/or vinegar. Such a wine is definitely inappropriate.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">Oxidative capacity is something completely different. These are different vinification techniques where the wine is exposed to air, i.e. oxygen, for a longer period of time. Many wines with oxidative notes gain complexity and are therefore highly desirable. I am not by chance referring only to white macerated or orange wines, but also to sparkling wines, especially some champagnes, and many unmacerated wines. The colour is usually a more pronounced yellow and the aromas are often reminiscent of fresh nuts and apples.<\/p>\n<div class=\" image-block-outer-wrapper layout-caption-below design-layout-inline combination-animation-site-default individual-animation-site-default individual-text-animation-site-default \" data-test=\"image-block-inline-outer-wrapper\">\n<figure class=\" sqs-block-image-figure intrinsic \" style=\"max-width:720px;\">\n<div class=\"image-block-wrapper\" data-animation-role=\"image\">\n<div class=\"sqs-image-shape-container-element has-aspect-ratio \" style=\"  position: relative; padding-bottom:75.1388931274414%; overflow: hidden;  \">\n              <noscript><img decoding=\"async\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/940c7138-5df6-4e81-9f84-284e6d4fd536\/naravna-vina01-xx-594112199e206-594112199ea23.JPG.720px.jpg\" alt=\"\"><\/noscript><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/940c7138-5df6-4e81-9f84-284e6d4fd536\/naravna-vina01-xx-594112199e206-594112199ea23.JPG.720px.jpg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/940c7138-5df6-4e81-9f84-284e6d4fd536\/naravna-vina01-xx-594112199e206-594112199ea23.JPG.720px.jpg\" data-image-dimensions=\"720x541\" data-image-focal-point=\"0.5,0.5\" alt=\"\" data-load=\"false\" data-image-id=\"631a1ee8a8c4156710dac051\" data-type=\"image\">\n            <\/div>\n<\/p><\/div><figcaption class=\"image-caption-wrapper\">\n<div class=\"image-caption\">\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>The wines of Emidio Pepe from Abruzzo are a concept of precision, but also of a very special character.<\/em><\/p>\n<\/div>\n<\/figcaption><\/figure>\n<\/p><\/div>\n<h4 style=\"white-space:pre-wrap;\">Brett<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">This is a strain of yeast (Brettanomyces) that can become dominant in the cellar, leading to wines with aromas that are most reminiscent of those in the barn.&nbsp;If this smell is predominant in the wine, we are definitely talking about a fault. But we have cases where the aforementioned notes are somewhere in the background. Many wine lovers see this as a positive thing. One of the most famous examples of wines with this character is Chateau Musar.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Mousiness<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">This is a bacterial infection that occurs in wines with a higher pH, usually during racking or bottling. The fault is not in the smell but in the aftertaste, which is reminiscent of spoilt milk. In a bottle, i.e. in an anaerobic environment, this unpleasant and undesirable property may disappear after a few months.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Increased viscosity (ropiness)<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">Increased viscosity is very rare and is usually only a phase in the development of the wine. These are chain-forming lactic acid bacteria. The wine is therefore extremely viscous, with an almost oily texture. The smell and taste remain unchanged and the wine usually returns to normal within a few months.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Volatile acids<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">Volatile acids have already been partially mentioned in the oxidation, as they are usually the result of exposure of the must\/wine to air. The upper limit is officially set and usually does not allow more than one gram per litre if the winemaker wants to label the geographical origin. It is important to reiterate here that too often we forget that wine is much more than just numbers. Volatile (or volatile &#8211; VA) acids can be extremely distracting and unpleasant, and we often come across wines that have a VA value of more than one gram, but this is not distracting at all; on the contrary, they can be beautifully integrated into the complexity of the wine and add value. They are like good black pepper on a fine steak.<\/p>\n<h4 style=\"white-space:pre-wrap;\">Moziting<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">Natural wines sometimes contain a small amount of carbon dioxide, which is reflected in the so-called maceration. If there is nothing wrong with the smell and taste, there is nothing wrong with that, but if it bothers you, you can remove the bubbles by turning the bottle a few times and decanting the wine.&nbsp;  <\/p>\n<div class=\" image-block-outer-wrapper layout-caption-below design-layout-inline combination-animation-site-default individual-animation-site-default individual-text-animation-site-default \" data-test=\"image-block-inline-outer-wrapper\">\n<figure class=\" sqs-block-image-figure intrinsic \" style=\"max-width:720px;\">\n<div class=\"image-block-wrapper\" data-animation-role=\"image\">\n<div class=\"sqs-image-shape-container-element has-aspect-ratio \" style=\"  position: relative; padding-bottom:75.1388931274414%; overflow: hidden;  \">\n              <noscript><img decoding=\"async\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/f362a702-b5ce-4cd7-8d0b-770877bf86d7\/naravna-vina02-xx-59411224a4d32-59411224a5fe7.JPG.720px.jpg\" alt=\"\"><\/noscript><img decoding=\"async\" class=\"thumb-image\" src=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/f362a702-b5ce-4cd7-8d0b-770877bf86d7\/naravna-vina02-xx-59411224a4d32-59411224a5fe7.JPG.720px.jpg\" data-image=\"https:\/\/images.squarespace-cdn.com\/content\/v1\/629f310167bb2202b7ad32c8\/f362a702-b5ce-4cd7-8d0b-770877bf86d7\/naravna-vina02-xx-59411224a4d32-59411224a5fe7.JPG.720px.jpg\" data-image-dimensions=\"720x541\" data-image-focal-point=\"0.5,0.5\" alt=\"\" data-load=\"false\" data-image-id=\"631a1f4642064b469bae8fd1\" data-type=\"image\">\n            <\/div>\n<\/p><\/div><figcaption class=\"image-caption-wrapper\">\n<div class=\"image-caption\">\n<p class=\"\" style=\"white-space:pre-wrap;\"><em>Excellent natural wines Milo\u0161 from Pelje\u0161ac<\/em><\/p>\n<\/div>\n<\/figcaption><\/figure>\n<\/p><\/div>\n<h4 style=\"white-space:pre-wrap;\">Opacity<\/h4>\n<p class=\"\" style=\"white-space:pre-wrap;\">Most sustainably produced wines are unfiltered and therefore not perfectly clear. Some wines show a more pronounced cloudiness, but this is far from being a defective wine. It is true, however, that cloudiness can result from contamination, in which case it is the result of a fault or disease in the wine.<\/p>\n<p class=\"\" style=\"white-space:pre-wrap;\">So we want to enjoy impeccable wines, but the definition of impeccability is something that will have to be debated a lot, because some people want to equate it with sterility and uniformity, which is totally unacceptable. Defining a shade of colour as the only acceptable one for a variety in a wine-growing area is just one of many absurdities. Deviations from such provisions are calmly labelled as errors, which they are not.
